TURKEY SCALLOPS WITH MUSTARD BOURBON SAUCE
Ingredients
2 tablespoons Dijon mustard
1/4 cup fresh orange juice
1 tablespoon Bourbon
1 tablespoon molasses
1 /4 teaspoon salt
1/4 teaspoon freshly ground pepper
6 uncooked turkey breast slices (1/2-inch thick)
1/2 cup chicken broth
2 tablespoons skimmed evaporated milk
2 tablespoons finely chopped cilantro or parsley
Directions
Whisk together the mustard, orange juice, Bourbon, molasses, salt and pepper in a shallow dish
Add the turkey slices; cover and refrigerate 2 to 4 hours. Remove the turkey from the marinade
Place the marinade in a small saucepan along with the broth and evaporated milk
Bring the mixture to a boil and then simmer 5 minutes. Rotate the turkey in the Flat Standard Basket for 15 to 20 minutes or until cooked through
Serve turkey topped with sauce and sprinkled with cilantro or parsley.
