TURKEY SCALLOPS WITH MUSTARD BOURBON SAUCE
  • Ingredients
  • 2 tablespoons Dijon mustard
  • 1/4 cup fresh orange juice
  • 1 tablespoon Bourbon
  • 1 tablespoon molasses
  • 1 /4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 6 uncooked turkey breast slices (1/2-inch thick)
  • 1/2 cup chicken broth
  • 2 tablespoons skimmed evaporated milk
  • 2 tablespoons finely chopped cilantro or parsley
Directions
  1. Whisk together the mustard, orange juice, Bourbon, molasses, salt and pepper in a shallow dish
  2. Add the turkey slices; cover and refrigerate 2 to 4 hours. Remove the turkey from the marinade
  3. Place the marinade in a small saucepan along with the broth and evaporated milk
  4. Bring the mixture to a boil and then simmer 5 minutes. Rotate the turkey in the Flat Standard Basket for 15 to 20 minutes or until cooked through
  5. Serve turkey topped with sauce and sprinkled with cilantro or parsley.
