SKEWERED TURKEY WITH RED PEPPERS
  • Ingredients
  • 1/2 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 1/3 cup honey
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 1-1/2 pound boneless turkey breast, skin removed
  • 2 onions, cut into 6 wedges each
  • 2 large red bell peppers, cut into 1-1/2 inch squares
Directions
  1. Combine the balsamic vinegar, olive oil, honey, thyme, rosemary, salt and pepper in a medium bowl
  2. Cut the turkey into 1-1/2 inch cubes and add to marinade
  3. Cover and refrigerate at least 2 hours and up to 24 hours. Alternately thread turkey, onions and red peppers on the kebob skewers
  4. Cook for 15 to 20 minutes or until the turkey is cooked through.
