SKEWERED TURKEY WITH RED PEPPERS
Ingredients
1/2 cup balsamic vinegar
1 tablespoon olive oil
1/3 cup honey
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper
1-1/2 pound boneless turkey breast, skin removed
2 onions, cut into 6 wedges each
2 large red bell peppers, cut into 1-1/2 inch squares
Directions
Combine the balsamic vinegar, olive oil, honey, thyme, rosemary, salt and pepper in a medium bowl
Cut the turkey into 1-1/2 inch cubes and add to marinade
Cover and refrigerate at least 2 hours and up to 24 hours. Alternately thread turkey, onions and red peppers on the kebob skewers
Cook for 15 to 20 minutes or until the turkey is cooked through.
