MUSTARD CRUSTED PORK ROAST
  • Ingredients
  • 1 3-1/2 pound lean boneless pork loin roast
  • 2 cloves garlic, minced
  • 1 teaspoon mustard seeds, crushed
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon freshly ground pepper
Directions
  1. Trim excess fat from pork
  2. Combine garlic, mustard seeds, dry mustard, onion powder, thyme and pepper and rub over the entire surface of the roast. Rotate the pork roast on the spit rods for 1-1/4 hours to 1-1/2 hours or until the internal temperature reaches 160 degrees on the instant thermometer
  3. Remove roast and let stand 10 minutes before slicing.
