Combine garlic, mustard seeds, dry
mustard, onion powder, thyme and pepper and rub over the
entire surface of the roast.
Rotate the pork roast on the spit rods for 1-1/4 hours to 1-1/2
hours or until the internal temperature reaches 160 degrees on
the instant thermometer
Remove roast and let stand 10 minutes
before slicing.
