PORK ROAST WITH SPICY SEASONING
  • Ingredients
  • 1 2-1/2 pound lean pork loin
  • Grated rind of 2 oranges
  • 1 teaspoon onion powder
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon ground ginger
Directions
  1. Trim fat from pork
  2. Toss together orange rind, onion powder, cumin, garlic powder, cayenne and ginger in a small bowl
  3. Sprinkle spice mixture over the pork and let stand 20 minutes. Rotate the pork on the spit rods for 1 hour or until the internal temperature reaches 160 degrees on the instant thermometer
  4. Remove roast and let stand 10 minutes; slice into 1/2-inch thick slices.
