Combine lime juice, wine, jalapeno, cilantro, pepper, garlic
powder, and cumin in a shallow dish
Trim pork of fat and
silverskin and add to marinade, turning to coat
Cover and
refrigerate 8 hours, turning occasionally.
Rotate the pork, one on each spit rod, 30 minutes or until the
internal temperature reaches 155 to 160 degrees on the instant
thermometer
Let stand 5 minutes, then slice and serve with
lime wedges.
