HONEY BOURBON PORK TENDERLOIN
  • Ingredients
  • 2 lean pork tenderloins (about 1-3/4 pounds total)
  • 1/3 cup diced onion
  • 1/3 cup fresh lemon juice
  • 1/3 cup Bourbon
  • 3 tablespoons honey
  • 3 tablespoons low-sodium soy sauce
  • 1 teaspoon minced fresh ginger root
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 /4 teaspoon freshly ground pepper
  • 2 tablespoons flour
  • 3/4 cup water
Directions
  1. Trim pork of all fat and silverskin
  2. Place in a shallow dish
  3. Whisk together the next 9 ingredients and pour over pork
  4. Cover and refrigerate 1 hour
  5. Remove pork from marinade, reserving 1/3 cup marinade. Rotate pork, one on each spit rod, for 25 minutes or until the internal temperature reaches 155 to 160 degrees on the instant thermometer. Place flour in a medium saucepan and whisk in reserved marinade and water
  6. Bring to a boil over medium heat and cook 3 minutes or until thickened, stirring constantly
  7. Slice pork and serve with sauce.
