RED WINE MARINATED FLANK STEAK
  • Ingredients
  • 1-1/2 pound lean flank steak
  • 1/3 cup dry red wine
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon water
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground allspice
  • 1 /4 teaspoon cayenne pepper
Directions
  1. Trim fat from steak and place in a large shallow dish
  2. Combine wine, lemon juice, Worcestershire sauce, water, basil, oregano, thyme, salt, allspice and cayenne
  3. Divide mixture in half
  4. Cover and chill half and pour remaining half over steak
  5. Cover and refrigerate for 24 hours, turning occasionally
  6. Remove steak from marinade and discard marinade
  7. Rotate steak in the Flat Standard Basket for 25 minutes or until cooked to desired doneness. Meanwhile, pour reserved marinade in a small saucepan and bring to a boil
  8. Keep warm
  9. Place cooked steak in a clean shallow dish and pour on the marinade
  10. Let stand 5 minutes
  11. Slice steak diagonally across grain into 1/4-inch thick slices and serve with juices.
