THAI CHILI-GLAZED SHRIMP
  • Ingredients
  • 1/2 cup sugar
  • 1/4 cup water
  • 1/4 cup white vinegar
  • 1/4 teaspoon salt
  • 1 teaspoon chili paste with garlic (or to taste)
  • 2 tablespoons fresh lime juice
  • 1 tablespoon fish sauce
  • 2 tablespoons chopped cilantro
  • 1 pound large shrimp, shelled and deveined
Directions
  1. Combine sugar, water, vinegar and salt in a small saucepan
  2. Bring to a boil, stirring until sugar dissolves
  3. Reduce heat and simmer until syrupy, but do not allow sauce to caramelize, about 15 minutes
  4. Remove from heat and stir in chili paste with garlic
  5. Cool
  6. Stir in lime juice, fish sauce and cilantro. Thread the shrimp on the kebob skewers
  7. Brush with sauce and rotate for 15 minutes or until shrimp are cooked through
  8. Serve with remaining sauce for dipping.
