SPICY GARLIC SHRIMP TAPAS
  • Ingredients
  • 2 pounds uncooked shrimp, shelled and deveined,
  • leaving tails attached
  • 1/2 cup dry sherry
  • 1/4 cup fresh lemon juice
  • 1 tablespoon olive oil
  • 2 large cloves garlic, minced
  • 2 teaspoons paprika
  • 1 teaspoon dried red pepper flakes
  • Lemon wedges for garnish
  • 2 (14 x 12 inch) sheets heavy-duty aluminum foil
Directions
  1. In a large bowl combine the shrimp, sherry, lemon, oil, garlic, paprika and red pepper flakes
  2. Cover and refrigerate for at least 1 hour
  3. Transfer the shrimp and marinade to one sheet of foil
  4. Top with the second sheet of foil and fold the edges over three times to seal the foil packet. Rotate in the Flat Standard Basket for 15 minutes
  5. Open packet and serve garnished with lemon wedges.
