MARGARITA SCALLOPS
  • Ingredients
  • 1/2 cup Tequila
  • 3/4 cup dry white wine or vermouth
  • 1/4 cup fresh lime juice
  • 1 teaspoon minced lime zest
  • 1 tablespoon vegetable oil
  • 1 /4 cup chopped fresh cilantro
  • 1 pound large sea scallops
Directions
  1. Combine the Tequila, wine, lime juice and lime zest with the oil and cilantro in a medium-size bowl
  2. Add the scallops; cover and refrigerate for 4 to 6 hours
  3. Remove scallops from marinade and rotate in the Flat Standard Basket for 15 minutes or until just cooked through.
