MARGARITA SCALLOPS
Ingredients
1/2 cup Tequila
3/4 cup dry white wine or vermouth
1/4 cup fresh lime juice
1 teaspoon minced lime zest
1 tablespoon vegetable oil
1 /4 cup chopped fresh cilantro
1 pound large sea scallops
Directions
Combine the Tequila, wine, lime juice and lime zest with the oil and cilantro in a medium-size bowl
Add the scallops; cover and refrigerate for 4 to 6 hours
Remove scallops from marinade and rotate in the Flat Standard Basket for 15 minutes or until just cooked through.
