TANGY HERB MARINATED FISH STEAKS
  • Ingredients
  • 6 (4 ounce) fish steaks
  • 1-1/2 cups dry white wine or vermouth
  • 1/2 cup fresh lemon juice
  • 1 tablespoon minced lemon zest
  • 1/4 teaspoon hot sauce
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 3 tablespoons mixed chopped fresh herbs
  • (such as parsley, mint, cilantro, or basil)
  • 1 teaspoon dried oregano
  • 1 teaspoon chopped rosemary
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
Directions
  1. Lay fish steaks in a shallow dish
  2. In a bowl, combine wine, lemon juice and zest, and hot sauce
  3. Stir in oil, garlic, fresh and dried herbs, salt and pepper
  4. Pour over fish; cover and refrigerate 2 to 4 hours. Remove fish from marinade and rotate fish in the Flat Standard Basket for 15 to 20 minutes or until flaky.
