HALIBUT WITH FRENCH MUSTARD SMEAR
  • Ingredients
  • 1 tablespoon olive oil
  • 1/2 cup minced shallots
  • 3 cloves garlic, minced
  • 1/4 cup Dijon mustard
  • 1 teaspoon dried rosemary, crushed
  • 4 teaspoons balsamic vinegar
  • 1/4 teaspoon freshly ground pepper
  • 6 (4 ounce) halibut steaks
Directions
  1. Heat olive oil in a small nonstick skillet over medium heat
  2. Add shallots and garlic; saute 3 minutes or until tender
  3. Remove from heat and cool
  4. Stir in mustard, rosemary, balsamic vinegar and pepper
  5. Smear on both sides of the halibut and rotate in the Flat Standard Basket for 15 to 20 minutes or until cooked through.
