HALIBUT WITH LEMON HERB MARINADE
  • Ingredients
  • 2 teaspoons minced lemon zest
  • 2/3 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh mint
  • 2 tablespoons chopped fresh oregano
  • 1/4 cup white wine vinegar
  • 1-1/2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 6 (4 ounce) halibut steaks
Directions
  1. Combine lemon zest and juice, garlic, herbs, vinegar, olive oil and salt in a shallow dish
  2. Add halibut, turning to coat
  3. Cover and refrigerate 30 minutes
  4. Remove fish from marinade and rotate in the Flat Standard Basket for 15 to 20 minutes or until cooked through.
