SAFFRON-ORANGE SALMON STEAKS
  • Ingredients
  • 4 small salmon steaks
  • Pinch saffron threads
  • 1 tablespoon very hot water
  • 1/4 cup fresh orange juice
  • 1 teaspoon minced orange zest
  • 1/2 teaspoon Dijon mustard
  • 1/3 cup sweet white wine
  • 1 tablespoon vegetable oil
  • 1 tablespoon minced shallots
  • 1/2 teaspoon coarsely ground pepper
  • 1/4 teaspoon salt
  • 2 tablespoons minced fresh parsley
Directions
  1. Place salmon steaks in a shallow dish
  2. Stir saffron into hot water and let stand 5 minutes
  3. Stir saffron and water together with orange juice and zest, mustard, wine, oil, shallots, pepper and salt
  4. Pour over salmon, cover and refrigerate for 1 hour. Remove salmon from marinade and rotate in the Flat Standard Basket for 15 to 20 minutes or until cooked through
  5. Serve sprinkled with parsley.
