Minty Lemon Marinade
  • Ingredients
  • 1/4 cup dry white wine
  • 1/3 cup fresh lemon juice
  • 1 tablespoon grated lemon rind (zest)
  • 1/2 cup olive oil
  • 1/4 cup chopped fresh mint
  • 3 tablespoons minced shallots
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
Directions
  1. Place the wine, lemon juice and zest in a medium bowl
  2. Whisk in the olive oil
  3. Stir in the mint, shallots, salt and pepper. Yield: 1-1/2 cups SUGGESTED USE: This tart minty marinade also doubles as a sauce for cooked lamb or chicken
  4. Or try marinating boneless chicken breasts (2 hours), lamb chops or kabobs (4 to 6 hours).
