LEAN AND ZESTY SWORDFISH STEAKS
Ingredients
2 (8 ounce) swordfish steaks
2 tablespoons low-sodium soy sauce
2 tablespoons fresh orange juice
1 tablespoon ketchup
1 tablespoon chopped fresh parsley
1 clove garlic, minced
1/2 teaspoon fresh lemon juice
1/4 teaspoon dried oregano, crumbled
1/4 teaspoon freshly ground pepper
Directions
Place swordfish in a flat dish
Stir together remaining ingredients and pour over fish turning to coat well
Cover and refrigerate for 1 hour. Rotate fish in the Flat Standard Basket for 15 to 20 minutes or until just cooked through
Serve immediately. Tip: Try cutting the swordfish into 1-inch pieces and then rotate on the metal skewers for 15 to 20 minutes
Remove fish from skewers to serve.
