GRAPEFRUIT AND HAZELNUT SWORDFISH
  • Ingredients
  • 1 teaspoon minced grapefruit zest
  • 1/4 cup fresh grapefruit juice
  • 2 tablespoons olive oil
  • 1/4 teaspoon celery salt
  • 1/8 teaspoon freshly ground pepper
  • 2 (12 ounce) swordfish steaks (1-inch thick)
  • 2 tablespoons finely chopped toasted hazelnuts
Directions
  1. Combine grapefruit zest and juice with olive oil, salt and pepper in a small bowl
  2. Place swordfish steaks in a shallow dish and pour grapefruit marinade over steaks
  3. Cover and refrigerate for 1 hour. Remove swordfish from marinade and rotate in the Flat Standard Basket for 15 to 20 minutes or until just cooked through
  4. Meanwhile, pour marinade into a small saucepan and bring to a boil on top of the stove
  5. Simmer for 3 minutes
  6. Serve swordfish sprinkled with hazelnuts and drizzled with boiled marinade.
