TUNA SKEWERS WITH LEMONS AND ONIONS
  • Ingredients
  • 1/3 cup chopped fresh oregano
  • 2 tablespoons ground cumin
  • 1 tablespoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 4 large cloves garlic, minced
  • 1-1/2 pounds tuna steaks, cut into 1-inch pieces
  • 3 small red onions, cut into 8 pieces each
  • 3 lemons, cut into 8 wedges each
Directions
  1. Combine oregano, cumin, red pepper flakes, salt, pepper and garlic in a medium-size bowl
  2. Add tuna pieces, tossing to coat
  3. Cover and refrigerate for 30 minutes. Remove tuna from marinade and alternately thread tuna, onion wedges and lemon on the kebob skewers
  4. Rotate 15 minutes or until the tuna is barely cooked through.
