Summer Tomato Marinade
  • Ingredients
  • 1/4 cup fresh lemon juice
  • 1/2 cup olive oil
  • 4 firm, ripe tomatoes, peeled, seeded and diced
  • 1/2 cup diced onion
  • 4 cloves garlic, minced
  • 1 tablespoon sugar
  • Pinch crushed red pepper flakes
  • 1/2 teaspoon salt
  • 1 /4 teaspoon freshly ground pepper
  • 1/2 cup chopped fresh basil
Directions
  1. Place lemon juice, olive oil, tomatoes, onion, garlic, sugar, red pepper flakes, salt and pepper in food processor
  2. Pulse to chop to a coarse texture
  3. Do not puree
  4. Stir in the basil. Yield: 2 cups SUGGESTED USE: Try this as a marinade on boneless chicken breasts (2 hours) or fish steaks or fillets (1 to 2 hours).
