WHOLE FISH WRAP WITH VEGETABLES
Ingredients
2 tomatoes, sliced
1/2 red onion, sliced
1 navel orange, peeled and sliced
1 serrano chili, sliced
1 1-1/2 to 2 pound whole lean fish, gutted and scaled
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
2 (14 x 12 inch) sheets heavy-duty aluminum foil
Directions
Lay tomatoes on one sheet of foil
Top with onions, oranges and chili
Season fish inside and out with lemon juice, salt and pepper
Lay on top of the vegetables
Top with the second sheet of foil and fold the edges over three times to seal the foil packet. Rotate in the Flat Standard Basket for 15 minutes
Open packet and serve.
