SALMON WRAPS WITH ORANGE, BASIL AND TOMATO
  • Ingredients
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon minced orange zest
  • 1 /2 cup dry white wine or vermouth
  • 1/2 cup fresh orange juice
  • 4 plum tomatoes, seeded and chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 4 (4 ounce) salmon steaks
  • 4 large fresh basil leaves
  • 2 (14 x 2 inch) sheets heavy-duty aluminum foil
Directions
  1. Place onion, garlic, zest, wine and orange juice in a small saucepan
  2. Bring to a boil and simmer until reduced to 1/4 cup
  3. Stir in tomatoes, salt and pepper. Place salmon steaks on one sheet of foil
  4. Top each with a basil leaf and 1/4 of the tomato-orange mixture
  5. Top with the second sheet of foil and fold the edges over three times to seal the foil packet
  6. Rotate in the Flat Standard Basket for 15 minutes
  7. Open packet and serve.
