FISH WRAPS WITH OLIVES AND TOMATOES
  • Ingredients
  • 4 (4 ounce) fish fillets
  • (like shark, halibut, sea bass or swordfish)
  • 1 tablespoon olive oil
  • 2 tablespoons chopped green onions
  • 2 tablespoons chopped black olives
  • 1/2 cup chopped fresh tomato
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1 tablespoon chopped fresh parsley
  • 2 (14 x 12 inch) sheets heavy-duty aluminum foil
Directions
  1. Lay fish fillets on one sheet of aluminum foil
  2. Drizzle with olive oil and sprinkle with green onions, olives, tomatoes, garlic and salt
  3. Top with the second sheet of foil and fold the edges over three times to seal the foil packet. Rotate in the Flat Standard Basket for 15 minutes
  4. Open packet, sprinkle with parsley and serve.
