FISH WRAPS WITH FENNEL, SAFFRON AND ORANGE
  • Ingredients
  • 1 tablespoon olive oil
  • 1 tablespoon chopped shallots
  • 1 clove garlic, minced
  • 1/2 cup diced fresh fennel
  • 2 teaspoons minced orange zest
  • 1 tablespoon chopped fresh basil
  • Pinch of saffron threads
  • 1/4 cup fresh orange juice
  • 4 (4 ounce) fish fillets
  • 2 (14 x 12 inch) sheets heavy-duty aluminum foil
Directions
  1. Heat oil in a small skillet and saute the shallots, garlic and fennel for 2 minutes
  2. Add the orange zest, basil, saffron and orange juice and simmer 2 minutes
  3. Cool slightly. Lay fish fillets on one sheet of aluminum foil
  4. Spoon on the fennel mixture
  5. Top with the second sheet of foil and fold the edges over three times to seal the foil packet
  6. Rotate in the Flat Standard Basket for 15 minutes
  7. Open packet and serve.
