SPAGHETTI SQUASH WITH SALSA FRESCA
Ingredients
1 4-pound spaghetti squash
1-1/2 cups fresh salsa
2 tablespoons fresh cilantro
3 tablespoons crumbled Feta cheese
Directions
Cut the squash in half lengthwise
Rotate in the Flat Standard Basket for 15 to 20 minutes or until soft
Cool slightly
Using a fork, remove spaghetti-like strands, discard shells
Place squash strands in a bowl. Heat salsa in a small saucepan until bubbly
Stir in cilantro. Serve over squash topped with feta cheese
