Pineapple Chili Marinade
  • Ingredients
  • 1/2 cup unsweetened pineapple juice
  • 1/4 cup fresh lime juice
  • 2 tablespoons soy sauce
  • 2 tablespoons chili powder
  • 1/3 cup dry white wine
  • 1/3 cup vegetable oil
  • 2 tablespoons diced seeded jalapeno
  • 1 /4 cup chopped red onion
  • 1/4 cup diced fresh pineapple
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon salt
Directions
  1. Place the pineapple juice, lime juice, soy sauce, chili powder, and wine in a medium bowl
  2. Slowly whisk in the oil
  3. Stir in the jalapeno, red onion, pineapple, cilantro and salt. Yield: 2-1/2 cups SUGGESTED USE: The sweet flavor of the pineapple really makes this a hit when countered with the chili powder and jalapeno
  4. Try it on shrimp (2 hours), fish fillets (1 hour), boneless chicken breast (2 hours) or pork chops or pork tenderloin (3 to 4 hours).
