BALSAMIC ROASTED ONIONS
  • Ingredients
  • 3 large sweet onions (about 1-3/4 pounds)
  • 1/4 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 2 (14 x 12 inch) sheets heavy-duty aluminum foil
Directions
  1. Peel onions, leaving roots intact; cut each into 6 wedges
  2. Combine vinegar, olive oil, thyme, basil, salt and pepper in a large bowl
  3. Add onions and toss gently to coat
  4. Turn onion mixture out onto one sheet of foil
  5. Top with second sheet of foil and fold edges over three times to seal the foil packet. Rotate in the Flat Standard Basket for 20 minutes
  6. Open packet and serve.
