HONEYED MANGOS WITH RUM
  • Ingredients
  • 3 tablespoons dark Rum
  • 2 tablespoons honey
  • 1/2 teaspoon minced lime zest
  • 1 tablespoon fresh lime juice
  • 1/8 teaspoon ground cinnamon
  • 5 cups sliced peeled ripe mango (about 3 pounds)
  • 2 (14 x 12 inch) sheets heavy-duty aluminum foil
Directions
  1. Stir the Rum, honey, lime zest and juice with cinnamon in a small bowl
  2. Arrange mango slices on one sheet of foil
  3. Drizzle with Rum mixture
  4. Top with second sheet of foil and fold edges over three times to seal the foil packet. Rotate in the Flat Standard Basket for 20 minutes
  5. Open packet and serve mango with juices.
