ROASTED SUMMER FRUIT SALAD
  • Ingredients
  • 1-1/2 cups sliced peeled papaya
  • 1-1/2 cups sliced peeled peaches or nectarines
  • 3/4 cup cubed peeled ripe mango
  • 1 tablespoon fresh lime juice
  • 1 tablespoon butter, melted
  • 1 teaspoon sugar
  • 6 tablespoons balsamic vinegar
  • 2 (14 x 12 inch) sheets heavy-duty aluminum foil
Directions
  1. Lay papaya, peaches, and mango on one sheet of foil
  2. Combine lime juice and melted butter and drizzle over fruit
  3. Sprinkle with sugar
  4. Top with second sheet of foil and fold edges over three times to seal the foil packet. Rotate in the Flat Standard Basket for 20 minutes
  5. Bring vinegar to a boil in a small saucepan and cook 3 minutes or until reduced to 1-1/2 tablespoons
  6. Open fruit packet and serve fruit drizzled with balsamic vinegar reduction.
