PINEAPPLE WITH BASIL AND GINGER
  • Ingredients
  • 1/4 cup honey
  • 2 tablespoons cider vinegar
  • 1 tablespoon finely chopped crystallized ginger
  • 1 teaspoon dry basil
  • 1 medium pineapple (about 3 pounds), peeled and cored
  • 2 (14 x 12 inch) sheets heavy-duty aluminum foil
Directions
  1. Stir together the honey, vinegar, ginger and basil in a small bowl
  2. Cut the pineapple into 1/2-inch thick slices
  3. Lay the pineapple slices overlapping on one sheet of foil
  4. Drizzle with honey mixture
  5. Top with second sheet of foil and fold edges over three times to seal the foil packet. Rotate in the Flat Standard Basket for 20 minutes
  6. Open packet and serve fruit with any juices.
