PEACHES WITH CHEESE AND PISTACHIOS
PEACHES WITH CHEESE AND PISTACHIOS
Ingredients
4 medium peaches, peeled and halved crosswise
1/2 cup part-skim ricotta cheese
2 tablespoons powdered sugar
1/8 teaspoon vanilla
4 teaspoons chopped toasted pistachio nuts
Directions
Rotate peaches in the Flat Standard Basket for 15 minutes or until tender and heated through
In a small bowl, combine the cheese, powdered sugar and vanilla
Spoon 1 tablespoon of the cheese mixture into the center of each peach half
Sprinkle with pistachio nuts and serve warm or cold.
