PEACHES WITH CHEESE AND PISTACHIOS
  • Ingredients
  • 4 medium peaches, peeled and halved crosswise
  • 1/2 cup part-skim ricotta cheese
  • 2 tablespoons powdered sugar
  • 1/8 teaspoon vanilla
  • 4 teaspoons chopped toasted pistachio nuts
Directions
  1. Rotate peaches in the Flat Standard Basket for 15 minutes or until tender and heated through
  2. In a small bowl, combine the cheese, powdered sugar and vanilla
  3. Spoon 1 tablespoon of the cheese mixture into the center of each peach half
  4. Sprinkle with pistachio nuts and serve warm or cold.
