Madeira Marinade
Madeira Marinade
Ingredients
1 /2 cup sherry or white wine vinegar
1 cup Madeira wine
1/4 cup olive oil
1/4 cup chopped shallots
2 cloves garlic, minced
1 tablespoon Herbes de Provence
1 tablespoon whole peppercorns
3 whole cloves
2 bay leaves
1 /2 teaspoon salt
Directions
Place vinegar and wine in a medium bowl
Slowly whisk in the olive oil
Stir in the shallots, garlic, Herbes de Provence, peppercorns, cloves, bay leaves and salt. Yield: 1-1/2 cups SUGGESTED USE: Use this interesting, slightly sweet marinade on beef eye of round or london broil (6 to 8 hours).
