OLD WEST STEAK SAUCE
  • Ingredients
  • 4-pound soupbone
  • 6 whole cloves water bay leaf
  • 1 teaspoon of salt
  • 1 bunch green onions
  • 1 tablespoon of peppercorns
  • 1/3 cup of butter or margarine
  • flour as needed
  • 1/3 cup marrow
Directions
  1. Choose a soupbone that has some good red meat
  2. In a pot, half cover with cold water and add salt, pepper- corns, bay leaf, and cloves
  3. Slowly bring to a boil and let simmer for about 5 hours
  4. Remove the bone, strain, and let stand until cold
  5. Remove grease from the top
  6. Add finely chopped green onions, butter, and chopped mar- row
  7. Boil until the amount is reduced to 4 cups
  8. Strain again
  9. Make a thin paste of flour and cold water and add slowly while stirring constantly
  10. Add just enough to slightly thicken the sauce
  11. Store in the refrigerator and serve warm as needed.
