CHILE SCAMPI
  • Ingredients
  • 3/4 cup extra virgin olive oil
  • 12 large garlic cloves, coarsely chopped
  • 1-1/2 tablespoons crushed dried red chile
  • 3 pounds large fresh shrimp, peeled,
  • de-veined and well washed
  • 1-1/2 tablespoons fresh lime juice
Directions
  1. In a large heavy frying pan, heat the olive oil over medi- um-high heat
  2. Add the garlic, and as it starts to brown, add the dried chile and the shrimp at the same time, slightly lowering the heat
  3. Quickly cook and stir. Add the freshly squeezed lime juice, evenly distributing it over the shrimp as they are cooking
  4. Saute only until done, about 5 minutes
  5. Serve hot on a heated platter arranged around the edge of Polka Dot Rice (recipe fol- lows)
  6. Serves 12.
