Place port, vinegar, and lemon juice in a medium bowl
Slowly whisk in the oil
Stir in the shallots, garlic, ginger,
sage, salt and pepper.
Yield: 2-1/2 cups
SUGGESTED USE: This marinade is a perfect match for beef
tenderloin (6 to 8 hours)
After cooking, boil the marinade
for 3 to 5 minutes and serve as a sauce.
