Port Wine Marinade
  • Ingredients
  • 1-1/2 cups ruby port
  • 1 /3 cup balsamic vinegar
  • 2 tablespoons fresh lemon juice
  • 1/2 cup olive oil
  • 2 tablespoons minced shallots
  • 2 cloves garlic, minced
  • 1 tablespoon minced fresh ginger
  • 3 tablespoons chopped fresh sage
  • 1/2 teaspoon salt
  • 1 /2 teaspoon freshly ground pepper
Directions
  1. Place port, vinegar, and lemon juice in a medium bowl
  2. Slowly whisk in the oil
  3. Stir in the shallots, garlic, ginger, sage, salt and pepper. Yield: 2-1/2 cups SUGGESTED USE: This marinade is a perfect match for beef tenderloin (6 to 8 hours)
  4. After cooking, boil the marinade for 3 to 5 minutes and serve as a sauce.
