OYSTER CATSUP
  • Ingredients
  • 1 pint oysters with juice
  • 1 cup sherry wine
  • 1 tablespoon salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon mace
Directions
  1. Scald oysters in their juice with wine
  2. Strain the oys- ters, finely chop, and add salt, cayenne pepper and mace
  3. Add to liquid in which the oysters were cooked and boil for five minutes
  4. Skim well and run through a sieve
  5. When cold, bottle and seal.
