Super Orange Marinade
  • Ingredients
  • 1/2 cup fresh orange juice
  • 1 tablespoon grated orange rind (zest)
  • 1/2 cup Grand Marnier liqueur
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Madeira wine
  • 1/4 cup vegetable oil
  • 2 cloves garlic, minced
  • 3 tablespoons minced fresh parsley
  • 1 tablespoon minced fresh rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
Directions
  1. Place the orange juice, zest, Grand Marnier, mustard and Madeira in a medium bowl
  2. Slowly whisk in the oil
  3. Stir in the garlic, parsley, rosemary, salt and pepper. Yield: 2 cups SUGGESTED USE: The liqueur provides an intense orange flavor to this special marinade
  4. Use it to soak a whole chicken or duck (8 to 10 hours) or a turkey breast (8 hours) or boneless chicken breasts (2 hours).
