SALSA FRESCA
Ingredients
1 cup finely diced red, ripe tomato,
excess juice and seeds removed
1 cup finely diced Spanish onion,
preferably red and white mixed
1 cup finely diced green chilies,
parched, peeled, and de-seeded
2 garlic cloves, finely minced
1-1 /2 teaspoons salt
Directions
Combine all the ingredients in an earthenware or porcelain bowl
Stir gently and set aside for at least 30 minutes before serving
Spoon on to cheese appetizers, chili, tamales, eggs, meat fish or poultry
Makes 3 cups.
