Place the olive oil, orange juice and lime juice in a medium
bowl and whisk to combine
Whisk in the garlic, chili,
cumin and salt.
Yield: 3/4 cup
SUGGESTED USE: Mojo sauce is a favorite Cuban sauce used
both as a marinade as well as a sauce to be used over the
cooked meat
Make a double batch - one to use to marinate
pork (2 to 4 hours) or chicken (1 to 3 hours) and the other
to serve drizzled over the cooked meat.
