Place the lemon juice and zest, the lime juice and zest,
sugar, garlic, cayenne and salt in a medium saucepan.
Bring mixture to a simmer, stirring often
Continue to cook
for 5 minutes
Whisk in the oil and let cool completely.
Yield: 1-1/2 cups
SUGGESTED USE: Be sure to cool the marinade completely
before pouring over chicken pieces (4 hours) or boneless
chicken breast ( 2 to 3 hours).
