BEEF AND PORK CHILI
  • Ingredients
  • 2 pounds beef chuck pound
  • 1 pork loin
  • 2 large onions, chopped
  • 3 tablespoons margarine or butter
  • 3 tablespoons olive oil
  • 3 cloves garlic, finely chopped
  • 1 to 2 teaspoons salt
  • 3 tablespoons chili powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon ground cumin
  • 1 cup tomato puree
  • 1 cup white wine
  • 2 tablespoons sesame seeds
  • 2 tablespoons parsley, finely chopped
  • 18 to 20 pitted or chopped ripe olives
  • 1/2 ounce unsweetened chocolate
Directions
  1. Cut beef and pork into 1-1/2 inch cubes, saute chopped onions in margarine or butter and oil until gold- en
  2. Add garlic and cook 3 to 4 minutes
  3. Lightly dredge meat with flour, push the onions and garlic to one side of the pan and quickly sear the meat
  4. Add salt, chili powder, oregano, cumin, tomato puree and wine
  5. Mix well
  6. Cover and simmer for 1-1 /2 hours. Uncover and test
  7. If the meat is not tender, cook another 20 minutes, or until quite tender, then add sesame seeds, chopped parsley, olives and unsweetened chocolate
  8. Stir and simmer another 30 minutes
  9. The chocolate acts as a binder that pulls the flavors together, and is a slight thickener. Taste before serving and be sure to add salt and chili powder as desired
  10. Serve with crackers or tortillas
  11. Makes about 4 to 6 servings.
