CREAM OF TOMATO/POTATO SOUP
  • Ingredients
  • 2-1/2 cups potatoes, diced
  • 3 cups tomatoes, peeled, seeded, and cubed
  • 2 onions, sliced
  • 1-1/2 teaspoons flour
  • 2 tablespoons lard or vegetable oil
  • 3 green chilies, diced (4 ounce can)
  • 2 tablespoons ground red chili
  • 1/2 cup light cream
Directions
  1. Bring potatoes, tomatoes, and onions to a boil in 1 quart of water
  2. Reduce heat to low and simmer for an hour
  3. Mix flour and oil, add green chilies, and stir into potato-tomato mixture
  4. Stir in red chili, blending thor- oughly
  5. Simmer for 20 minutes
  6. Add cream and simmer 5 minutes longer
  7. Makes 6 servings.
