PORK & WHITE BEANS WITH GREEN CHILI
  • Ingredients
  • 2 large green bell peppers, seeded
  • 3 tablespoons vegetable oil
  • 2 cups sliced green onions (including tops)
  • 8 cloves garlic, minced or pressed
  • 4 teaspoons ground cumin
  • 6 cans (13 oz. each) tomatillos
  • 4 cans (7 oz. each) diced green chilies
  • 6 cans (15 oz. each) Italian white beans
  • or 9 cups cooked small white beans
  • 3 pounds boneless pork shoulder or butt
  • 4 teaspoons dry oregano leaves
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup lightly packed fresh cilantro leaves
Directions
  1. Thinly slice bell peppers crosswise
  2. Heat oil in a 12- quart pan over medium-high heat
  3. Add bell peppers, onions, garlic, and cumin
  4. Cook, stirring occasionally, until onions are soft (about 5 minutes)
  5. Mix in tomatil- los (break up with a spoon) and their liquid, chilies, beans, pork, oregano, and red pepper. Bring to a boil
  6. Reduce heat and simmer until pork is tender when pierced (1-1/2 to 2 hours)
  7. For a thinner consistency cook covered
  8. If you prefer a thicker dish, cook uncovered
  9. Stir occasionally
  10. Set aside a few cilantro leaves and chop remaining leaves
  11. Stir in chopped cilantro and use reserved leaves for a garnish
  12. Makes 10 to 12 servings.
