OYSTER SOUP
  • Ingredients
  • oysters, two 8-ounce cans
  • oyster crackers
  • 1 tablespoon of butter,or margarine
  • 2 cups of milk
  • 1 cup of light or heavy cream
  • a pinch of ground mace
  • a pinch of ground nutmeg
  • a pinch ground pepper
Directions
  1. Drain liquid from oysters into measuring cup and add water to make 1 cup liquid
  2. Heat this liquid in saucepan or kettle with another cup of water
  3. Crush enough oys- ter crackers to produce 2 cup of fine crumbs, and stir them, along with butter, into hot liquid
  4. When boiling starts, add oysters and simmer 1 to 2 minutes. Add milk, cream, mace, nutmeg, and pepper, and return just to boil
  5. Remove from heat and ladle into bowls
  6. Serve with side dish of oyster crackers
  7. Makes six small servings.
