Jalapeno Jelly Marinade
  • Ingredients
  • 1/2 cup jalapeno jelly
  • 1 tablespoon grated lime rind (zest)
  • 1/2 cup fresh lime juice
  • 1/4 cup vegetable oil
  • 2 cloves garlic, minced
  • 1/4 cup minced onion
  • 1 /2 teaspoon ground cumin
  • 1 /2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
Directions
  1. Place the jalapeno jelly in a small saucepan
  2. Cook over low heat to melt
  3. Let cool and place in a blender or food processor
  4. Add the lime zest and juice and with the motor running, drizzle in the oil
  5. Stir in the garlic, onion, cumin, salt and pepper. Yield: 1-1/2 cups SUGGESTED USE: The jelly is a perfect blend of sweet and spicy
  6. Use this marinade on chicken wings (6 to 8 hours), a whole chicken or Cornish game hens (6 to 8 hours) or pork spareribs (6 to 8 hours).
