Jalapeno Jelly Marinade
Jalapeno Jelly Marinade
Ingredients
1/2 cup jalapeno jelly
1 tablespoon grated lime rind (zest)
1/2 cup fresh lime juice
1/4 cup vegetable oil
2 cloves garlic, minced
1/4 cup minced onion
1 /2 teaspoon ground cumin
1 /2 teaspoon salt
1/4 teaspoon freshly ground pepper
Directions
Place the jalapeno jelly in a small saucepan
Cook over low heat to melt
Let cool and place in a blender or food processor
Add the lime zest and juice and with the motor running, drizzle in the oil
Stir in the garlic, onion, cumin, salt and pepper. Yield: 1-1/2 cups SUGGESTED USE: The jelly is a perfect blend of sweet and spicy
Use this marinade on chicken wings (6 to 8 hours), a whole chicken or Cornish game hens (6 to 8 hours) or pork spareribs (6 to 8 hours).
