BAKED POSSUM

Directions
  1. Bring a large kettle of water to a boil
  2. Then remove ket- tle from fire
  3. Drop the unskinned possum into the water until the surface hair can be easily pulled out
  4. Remove possum from kettle and skin. Clean and cut into serving pieces
  5. Roll pieces in flour seasoned with salt, pepper, and garlic
  6. Melt 1/4 cup butter or margarine in a heavy iron skillet and brown meat pieces. Slice vegetables (onions, carrots, celery, potatoes) over meat pieces
  7. Pour a cup of sour cream over the skillet contents
  8. Cover skillet and bake in a 300F
  9. oven for approximately 1-1/2 hours.
