PHEASANT IN CREAM SAUCE
  • Ingredients
  • 1 pheasant, quartered
  • salt
  • 1 can condensed cream of mushroom soup
  • 1/2 cup sour cream
  • 3/4 cups fresh, sliced mushrooms
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup onion, chopped
Directions
  1. Preheat oven to 350?F
  2. Rub pheasant quarters with salt and place them In baking dish with skin side up
  3. In separate bowl mix together the mushroom soup, sour cream, mushrooms, cheese and onion. Spread this mixture over the pheasant and bake in oven for 1-1/2 to 2 hours or until tender
  4. Baste occa- sionally with sauce during baking
  5. Serve with wild rice on the side
  6. Serves 3 to 4
