DUMPLINGS
  • Ingredients
  • 2 cups flour
  • 1 heaping teaspoon salt
  • 1 teaspoon baking soda
  • 3/4 to 1 cup cultured buttermilk
Directions
  1. In a large bowl, mix diy ingredients well
  2. Pour in 3/4 cup of the buttermilk and mix quickly with a fork
  3. The dough should be stiff but too moist for rolling
  4. Add remaining milk if needed. Be sure your stew or broth is simmering on the stove. With a soupspoon drop the dough onto the bubbling liq- uid, covering the surface
  5. Let simmer on medium-low heat until dumplings puff and lose their gloss (8 to 10 minutes)
  6. Cover with a lid, reduce heat to low, and sim- mer another 8 to 10 minutes, until dumplings are cooked through
  7. Dumplings in a skillet can be cooked uncovered by turning them halfway through.
