CHILI VENISON
CHILI VENISON
Ingredients
2 pounds venison meat, cut into l-inch cubes flour
1/4 cup lard or vegetable shortening
1 large onion, chopped
2 cloves garlic, peeled and minced
2 4 -ounce cans of green chili peppers, sliced
4 medium-sized green tomatoes, cubed
1 teaspoon salt
1 teaspoon cumin
1/2 teaspoon oregano
Directions
Dredge venison in flour
In a large, heavy saucepan, saute meat in lard or other shortening until lightly browned
Transfer to a plate. Saute onion, garlic, and chili peppers in same pan until onion is slightly wilted. Return meat to pan with remaining ingredients
Add enough water to cover and simmer for 2-3 hours or until tender
Makes 6 servings
