CHILI VENISON
  • Ingredients
  • 2 pounds venison meat, cut into l-inch cubes flour
  • 1/4 cup lard or vegetable shortening
  • 1 large onion, chopped
  • 2 cloves garlic, peeled and minced
  • 2 4 -ounce cans of green chili peppers, sliced
  • 4 medium-sized green tomatoes, cubed
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
Directions
  1. Dredge venison in flour
  2. In a large, heavy saucepan, saute meat in lard or other shortening until lightly browned
  3. Transfer to a plate. Saute onion, garlic, and chili peppers in same pan until onion is slightly wilted. Return meat to pan with remaining ingredients
  4. Add enough water to cover and simmer for 2-3 hours or until tender
  5. Makes 6 servings
