PUEBLO VENISON STEW
  • Ingredients
  • 2 pounds venison, cut into l-inch cubes
  • flour
  • 1/4 cup lard or vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, peeled and minced
  • 1 medium-sized sweet green pepper,chopped
  • 1 cup dry corn kernels
  • 1 cup dry pinto beans
  • 1/2 cup pinon nuts, chopped
  • 1/4 cup sunflower seeds, shelled and crushed
  • 2 dried juniper berries, crushed
  • salt and pepper to taste
Directions
  1. Dredge venison in flour
  2. In a large, heavy saucepan, saute venison until lightly browned
  3. Transfer to a plate
  4. Saute onion, garlic and pepper in same pan until onion is slightly wilted. Return meat to pan with remaining ingredients
  5. Add enough water to cover venison and vegetables
  6. Simmer for 3 hours or until tender
  7. Makes 6 servings.
