PEAR STUFFING
  • Ingredients
  • 2 cups dried pears, stewed
  • 2 quarts white bread, cubed
  • 1/2 cup diced onion
  • 3/4 cup butter
  • 2 cups chicken broth
  • 1 tablespoon salt
  • 1/4 teaspoon coarsely ground pepper
  • 1 teaspoon poultry seasoning
  • 1 6-1/2 ounce can salted cashew nuts
Directions
  1. Stew pears in a small amount of water until soft, then dice fine
  2. Meanwhile cut bread into small cubes
  3. Saute onion in butter, mix with the bread, and toast mixture in the oven until dry
  4. Moisten with the broth, add season- ings, pears, and cashews, place in bread pan, and bake for 30 minutes at 350F
  5. This is so good the second day, you can make it a day ahead and reheat it with fine results
  6. Whatever you do, mix with a light touch so you don't smash the bread cubes
  7. Heavy mixing results in soggy, brick-like stuffing.
